Welcome to another UWASA blog post!! Today is about everyone’s first love, FOOD!

On Wednesday 2nd November 2016, UWASA hosted an event called Rice UP! where people make different types of rice and everyone who attends is a judge. The winners of the of the overall competition were our one and only events coordinator, Yeabsra Agonfer and Fiqir Worku. The name of their rice is Pilaf which is a delicacy in Eastern Africa, the Middle East and the Caribbean.

The ingredients needed to make the dish are (4-6 servings):

Process to make the dish:

  • In a large saucepan, heat the oil and saute the onions until soft.
  • Stir in the rice and cook, stirring frequently, for 4 minutes.
  • Add the raisins, chili, lime zest, cinnamon sticks, cardamon, salt and 4 cups of water and stir well.
  • Cover the pan and simmer for 15-18 minutes or until the rice has absorbed all the liquid.
  • Meanwhile, lightly toast the slivered almonds in a dry frying pan.
  • Remove the saucepan from the heat and fluff up the rice with a fork.
  • Stir in the almonds, parsley and season to taste before serving.
